I’m not much of a eat-out kind of gal… however, recently I’ve eaten at a couple of “ok” restaurants but tonight I ate at what I now consider Asheville’s best restaurant- the Laughing Seed Cafe.

The chic coziness of this Asheville restaurant created a very relaxing, welcoming feel. The dim lights and ironwork on the walls created a warm atmosphere throughout:

Options on a menu as a vegetarian are normally hard to find- but not here! This menu consisted of ALL fresh, vegetarian dishes. Beyond vegetarian, you also have vegan, raw, and gluten-free options. The menu changes with the seasons- just as fresh produce changes throughout the year. The Laughing Seed is farm to table cuisine at its best.

After a couple of recommendations from the waitress, we chose this entree:

East/West Quesadilla: A creamy Indian influence filling of potato, yams, scallions, roasted red peppers, and cheese, flavored with curry and layered with spinach and their classic mole sauce. Topped with red salsa and Jack cheese and served with black beans and a tossed salad. $13 We ordered the Mango-Lime salad dressing that is highly recommended!
^^This was PLENTY for two- my mom and I split this entree and we still had food left over. I’m not a cheese lover- so I easily scraped the top layer of cheese off of my half, but I’m sure I could have asked them to only put the cheese on half! The staff was so accommodating.
No room for dessert this time. But next time, I’ll hopefully get to try one of their organic desserts such as the Carrot Cake or Fresh Fruit Cobbler du Jour!
